"The Cheesecake"

When a client challenged Chef Berthsy Ayide to make him a lactose and
gluten-free cheesecake
, her initial reaction was to suggest he have a piece
of fruit for dessert instead. But intrigued by the concept, she set to work anyway.
After experimenting with rice bran flour and a host of soy based products,
she was able to create what may very well be the best cheese-less cheesecake
ever eaten.
